Taco Salad with Raw Vegan Taco ‘Meat’ and Chipotle Cashew Crema!! This is so freaking good, you will fall in LOVE with salad and impress your guests. This faux meat is also great in raw vegan tacos, wraps, nachos, you name it! And the chipotle cashew crema is super creamy, spicy, rich & delicious. Each make enough for 4 servings so you can have this for a big group or eat it over multiple days.
My husband and I like to eat half on the day I make it and save the other half for the next day! This is also a favorite at parties & potlucks, no one will even know it’s raw & vegan. 🙂
The best part is it’s simple and easy to make! The faux ‘taco meat’ doesn’t require a dehydrator and is super yummy on it’s own. Just throw everything in the blender, tamp it down, and pulse till combined but chunky. I’ve seen quite a few taco ‘meat’ recipes that contain cups of nuts as the base, this one is much lighter because I’ve used mushrooms as my base and therefore also contains just the right amount of fat, not too much.
The ‘crema’ or cream sauce is spicy & super good. You can choose to add a spoonful of my infamous homemade GF SF gochujang if you want it extra spicy and delicious. I like mine quite hot!

Taco Salad with Raw Vegan Taco Meat & Chipotle Cashew Crema
Ingredients
Taco 'Meat'
- 1 cup mushroom pieces
- 1/4 cup walnut pieces
- 1/4 cup sun-dried tomatoes, soaked (save liquid)
- 2 scallions, diced
- 1 tbsp coconut aminos
- 1 tbsp taco seasoning
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
Chipotle Cashew Crema
- 1/3 cup cashews
- 1/2 tsp paprika
- 1/2 tsp chipotle powder
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp sea salt
- 1 lemon, juiced
- 1 tsp GF SF gochujang (see recipe) optional
- 1/4 cup soaking liquid from the sundried tomatoes
Salad Ingredients
- lettuce
- radishes
- bell pepper
- tomatoes
- cilantro
- scallions
- pickled jalapenos, diced
- purple cabbage
- avocado
- 1/2 lime, squeezed
Instructions
For Taco 'Meat'
- Add everything to the blender except the soaking liquid from the sundried tomatoes, save for the crema, below.
- Blend using the tamper but leave it chunky, don't blend to smooth or it will lose the texture.
For the Crema
- Add everything to the blender including the liquid from the sundried tomatoes, blend until smooth, thick & creamy.
For the Taco Salad
- Add your lettuce and veggies to a large salad bowl, squeeze lime juice over top.
- Add your crumbled taco meat & drizzle with some chipotle cashew crema. Enjoy!
