Raw Vegan Cauliflower Rice!! Easy and versatile, this is a grain-free and raw substitute for rice in all your favorite dishes from tacos, to rice bowls, burritos, and more. Lately I have been loving this served over kale salad massaged with avocado and lime like in my Raw Vegan Tacos recipe and adding in some chopped ataulfo mangoes. It’s sooo good and tropical, reminds me of summer. 🙂
Of course you can make cauliflower rice with just cauliflower, nothing added. This is lightly seasoned to give it more of a ‘cooked taste’ and that makes all the difference for me! Also, if you’re not sure about cauliflower, you will love this recipe because it’s actually a very mild vegetable and the seasonings and lemon or lime juice cover up any specifically cauli-esque taste.
This recipe is low fat raw vegan (lfrv), grain-free, gluten-free, oil-free, nut-free, soy-free, corn-free and medical medium protocol friendly. This also makes quite a lot of rice so one recipe can serve 4+ people and you can save some in the fridge for the next day.
- 3 cups cauliflower, chopped
- 1 lime or lemon, juiced
- ½ tsp onion powder
- ½ tsp garlic powder
- ½ tsp sea salt
- Add all the ingredients to the food processor
- Pulse until rice-like texture forms, about 30 seconds
- Serve and enjoy!
