Rainbow Slaw Lettuce Wraps!! A budget friendly, filling & scrumptious raw dish that you’ll want to keep in the rotation and your family will love it too! This dish makes a large amount, enough for 2-4 people as a meal, depending on how hungry you are. It’s also great for sharing and you can take it to potlucks & parties.
This recipe is grain-free, gluten-free, oil-free, soy-free, corn-free, nut-free, and medical medium protocol friendly. It’s also free of added sugar & salt.
Budget Friendly
Many people think that going raw vegan will cost them more money, but most of the expensive items like raw dried white mulberries, and stick to the produce aisle, you’ll find that you can easily stick to your budget on a raw vegan diet. Cabbage, carrots, broccoli and zucchini are generally some of the cheapest veggies in the store and they are the stars in this recipe! Lettuce is also pretty inexpensive. I also love that I can get all of the main ingredients unpackaged. 🙂
Rainbow Slaw Lettuce Wraps
Ingredients
- 4 medium carrots
- 1 zucchini
- 1 head broccoli
- 1/2 head purple cabbage
- 1 lemon, juiced
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/4 tsp black pepper
- 1/4 tsp chili flakes
- 1 tbsp dulse flakes
- 3 tbsp coconut aminos
- 5 tbsp tahini
Instructions
- Shred the 4 veggies in a food processor using the shredding disk or by hand.
- Add the lemon juice and mix the slaw well to combine.
- Add the coconut aminos and mix again thoroughly.
- Add the dulse flakes & spices, stir to combine.
- Add the tahini and mix again thoroughly.
- Serve in lettuce leaves for wraps. Enjoy!
