No Nooch Vegan Cheese Sauce! This is the best vegan cheese sauce, it’s whole foods plant-based with no processed ingredients including no ‘nooch’ aka nutritional yeast as the vegan community fondly calls it. Nutritional yeast is one of those things it’s easy to get addicted to and then you want to put it on everything. I’ve found what works best for me is to avoid those addicting foods all together so I can taste and enjoy the flavors of whole foods.
It wasn’t till I read books by Anthony William the ‘medical medium’ where he mentions nooch is pretty much MSG, that I cut it out all together. The one thing I wasn’t sure I’d be able to pull off was vegan cheese without nutritional yeast, but luckily this turned out pretty epic. In fact, my husband says this is my best vegan cheese sauce yet and he prefers it without nooch!
This recipe is also very easy to make and comes together in a matter of minutes. One full recipe will make you a LOT of cheese, and as it cools it firms up nicely so can play with that to find a texture that works for you. With just one recipe of this cheese I was able to make vegan mac n’ cheese, vegan quesadillas, and vegan cheese fries! YUM. It’s also oil-free, low fat, soy-free, and gluten-free. So hopefully this will work for nearly anyone with allergies! If you are allergic to nuts substitute some cooked white beans instead. π
- 1 cup potatoes
- 1 large carrot
- ¼ large onion
- ¾ cup water
- ¼ cup cashews
- 1 tsp sea salt
- 1 tsp paprika
- ½ tsp turmeric
- Chop up the carrot, potato & onion then boil in the ¾ cup water until soft, about 10 minutes.
- Place all the ingredients in the blender including the cooking liquid.
- Blend until smooth.
- Let cool for a thicker cheese or use right away while hot! Enjoy
This will be even thicker if left in the fridge the next day.

Iβm trying to stay away from white potatoes can I substitute those for sweet potatoes, butternut squash or kidney beans?

Yes, you can sub sweet potato or butternut squash, it will be a bit sweeter though so you might want a pinch more salt! The color will also be more orange than yellow. ππ

Cashews are expensive where I live, peanuts and sesame seeds are cheap and flax/sunflower seeds are in the middle. Can I use any of those in place?

Hello Sean!! That’s a great question, I’ve tried with other nuts & seeds and it hasn’t worked as well. White beans, like cannellini beans, work well instead of cashews and they are cheaper! I hope that helps. π

I just made this. I wanted a little bit more salt so added 1 1/2 tsp. of my white miso. I probably added a bit more of potato and carrot than you called for in the recipe, so mine was super thick. No ooo problem, I just added more water.
The result…. I’m running around the living room like a new little puppy peeing all over myself!!! Lol!

I just made this and it is delicious. I really appreciate a vegan cheese style sauce without nutritional yeast. I will have to make a couple of changes when I make this again.
1. I found it too salty for me. I will try it with 1/2 tsp of salt next time and see how that goes. I think some salt is necessary to keep the cheesy flavor.
2. 3/4 cup of water was not enough to boil the potatoes, carrot and onion. It boiled away before 10 minutes passed. So I will use more water in the pot but still only take 3/4 cup for the blending.
I might try a bit of smoked paprika once Iβve got the salt balanced.
