Vanilla Mango Coconut Smoothie!! Nothing says springtime then when ataulfo mangoes are finally in season! They are my favorite mango and they arrive in stores before the first leaves are on the trees or the first blade of grass is green up here. Every year I look forward to the few months where you can get these yellow jewels everywhere and for a good price. These mangoes are on the smaller side but they aren’t called ‘honey’ or ‘champagne’ mangoes for nothing, they’re soooo good. Nutritional Comparison of No Greens vs Spinach
If you have been following my Instagram, then you know I’ve been making this smoothie for years…only without any greens. Sure if you leave the greens out it’s a pretty yellow smoothie, but you miss out on so many more vitamins and minerals. One thing I want to highlight with this recipe is how I’m focusing on nutrient density in my meals, and one of the tastiest and easiest ways to do that is to add lots of greens to your fruit smoothies.
If you watch the video above you’ll see at the end a nutritional comparison between the smoothie with and without spinach. Spinach is an easy green to include because it won’t change the flavor overall, it’s very mild. Another benefit of adding greens is you’ll feel more balanced drinking smoothies without that ‘sugar rush’ feeling from just fruit smoothies and the mineral salts in greens help your brain to perk up along with the glucose in the fruit.
Make this creamy, nutritious & tropical-tasting smoothie to give your body the liquid sunshine it needs to wake up from winter. This recipe makes 2 32-oz portions. YUM!
- ½ lb spinach
- 5 ataulfo mangoes
- 6 medjool dates
- 2 cups coconut water
- 1 tsp vanilla extract
- water to thin
- ice cubes
- Add everything to the blender
- Blend until smooth & creamy
