Low Fat Raw Vegan Pea Soup! This delicious pea soup is warm, creamy & savory. This is SO good I’ve been having this at least once a week. It’s made of ingredients you mostly have on hand, and I always have a bag or two of frozen green peas in the freezer so I can make this anytime! Fresh peas would also be awesome in here, but they’re currently out of season since it’s wintertime.
This is a low fat raw vegan recipe, it is also gluten-free, oil-free, nut-free, soy-free, corn-free and medical medium protocol friendly.
This super simple pea soup recipe is quick & easy, just throw everything in the blender and enjoy! And this makes two very large servings or can be a side or starter. I like to make this as part of a soup-and-salad meal and then this would serve four people.
For that perfect pea color
In this recipe I usually use yellow tomato and yellow bell pepper, that helps to keep the bright green color of the soup, but any color tomato & bell pepper will work. If you use red pepper and/or red tomato it will still be green, but a little muted in color.
One thing to note is that green bell peppers are simply unripe bell peppers – never use those! It’s best to not eat unripe fruits and veggies for optimal nutrition and digestion. Bell peppers when ripe can be yellow, orange, red or purple. 🙂
How to Warm But Stay Raw
Any fruits and veggies heated below 118F are still considered ‘raw’ because the enzymes are intact! Raw food is not about eating all your food cold, it’s about making sure your food is nutrient dense and has active enzymes. It’s about eating living food for your living body.
To heat this soup up blend it a while in your Vitamix till it is warm to touch, it might even steam a bit. It’s ready when it’s warm to touch, which should only take about 2 minutes.
