Raw Vegan Oatmeal!! This oatmeal or raw vegan porridge recipe is actually grain-free, no oats involved! This recipe is quick, easy and super delicious. If you miss having oats in the morning this is a great option. It’s also very easy to make with a food processor or just mince everything extra fine and then mash with a fork. 🙂
I created this recipe as part of my week without a blender, if you want to know more watch my video: What I Eat in a Day Low Fat Raw Vegan (LFRV) without a Blender! on YouTube. It’s also a great breakfast or meal anytime in winter when you don’t want a cold smoothie or frozen nice cream. You could also warm this up a bit in the dehydrator for extra coziness.
This keeps well in the fridge for the next day and serves two, so feel free to make the night before and portion out into jars for an easy breakfast meal on the go! The fruits will oxidize a bit if not eaten right away, so the color will be a little darker the next day.
I also love to get creative with toppings on this raw vegan oatmeal, lately I’ve been using frozen wild blueberries and shredded coconut as sprinkles. Adding berries is a great way to up the nutrient profile and get more antioxidants. For a more well rounded and nutrient-dense meal, have with a side of spinach or sprouts for your greens. YUM!
- 4 bananas, sliced
- 1 apple, chopped
- 4 medjool dates, pitted & halved
- ⅛ tsp or a 'dash' of pumpkin pie spice
- Toppings: berries & shredded coconut
- Put the fruits in the food processor
- Pulse and blend until oatmeal-like texture
- Serve with toppings like berries, sprouts, coconut, and more. Enjoy!
