Raw Vegan Mango Lassi Recipe!! I had to share this quick invention with you because it is sooo good! As you can see from my latest ‘what I eat in a day’ vlog, I invented this in a pinch and it was delicious. This is a raw vegan twist on a traditional mango lassi but with lots of greens of course. 🙂

What makes this so good and gives it that authentic flavor is ripe ataulfo mangoes, tangy probiotic coconut yogurt & a bit of fresh ginger. YUM. I really hope you’ll give this one a try!
- ½ lb spinach
- 4 bananas
- 4 medjool dates, pitted
- 4 ataulfo mangoes
- ½ cup plain coconut yogurt
- 1 tsp vanilla extract
- ½ inch piece of fresh ginger
- water & ice to taste
- Blend until smooth & enjoy! Serves 2.
