Chia Seed Pudding! It’s is sweet, creamy, satisfying and super delicious. This chia pudding is easy to make ahead of time and take with you on the go for a quick meal. I let it sit in the fridge overnight, stir it a few times, and it’s ready the next day! If you like rice pudding, then you’ll love this! And it’s even better because there is no cooking. 🙂
This chia pudding is very versitile, I make it with my homemade cashew milk but you can use any plant milk that you like. You could even add some raw cacao or matcha powder to your cashew milk to give this a new base flavor. Strawberry cashew milk would be amazing too and then it would be pink!
You can also top this staple raw recipe with any fruit you like, I used strawberries in this video but you could use blueberries, wild blueberries, raspberries, bananas, mangoes, etc. Let me know what you put on top, in a comment below! YUM 😋
Chia Seed Pudding
Ingredients
- 3 tbsp chia seeds
- 1 cup cashew milk
- 1/4 tsp vanilla extract
- 1 tbsp maple syrup
Instructions
- Add all the ingredients to a mason jar, stir to combine.
- Place in the fridge overnight, stir once before bed & stir it again in the morning.
- It will be ready for lunch, serve with 1 cup of fruit on top!
