Last month for our wedding anniversary I created a raw chocolate almond butter ice cream cake that was too good not to share!! This deliciously decadent and deceivingly easy cake will complete any special occasion and can be made in about 15 minutes the day before then frozen overnight.
This is really three recipes in one! The base is my raw chocolate cookie crust and can be eaten alone by forming into cookie shapes or even into tiny balls for ‘cookie dough’ in ice cream, ooooh yeah! Here is a picture from my personal Instagram where I used the dough to make heart-shaped cookies:
The chocolate banana ice cream filling is amazing on it’s own and is one of my favorite desserts (read: dinners), my friends always request it when they visit. It’s so good!
When you combine all these tasty layers it creates the perfect storm of healthy raw ice cream cake goodness that is much more rich and grown-up than anything you can get in the store. The best part is this cake is made of whole plant-based ingredients and completely gluten and dairy free. While this is higher in fat than a daily food meal, I think that’s just fine for those special moments like anniversaries, birthdays, and parties.
- 1 cup dried shredded coconut, unsweetened
- 20 medjool dates, pitted
- 2 tablespoons raw tahini paste
- 2 tablespoons raw cacao powder
- 1 teaspoon vanilla extract
- dash of pink sea salt
- 5-7 large frozen bananas
- 2 tablespoons raw cacao powder
- 1 teaspoon vanilla extract
- Add all of your chocolate cookie crust ingredients to a food processor and blend until it forms a dough ball.
- Place the dough in a spring-form cake pan and press down to distribute evenly.
- Spread the raw almond butter over the first layer.
- Place your chocolate ice cream ingredients in the VItamix blender and using the tamper blend till creamy smooth.
- Spread the ice cream on top of the almond butter for the final layer.
- Sprinkle with dark cacao coconut crisps or any topping you like!
- Freeze overnight.
