Lower Fat Guacamole
  • 3 stalks celery
  • ½ medium zucchini
  • ¼ onion
  • 2 garlic cloves
  • 1 lemon, juiced
  • 2 medium avocados
  • 2 scallions, diced
  • 1 cup cilantro, chopped
  • ½ cup cherry tomatoes, halved
  • 2 tsp sea salt (optional)
  1. Blend the celery, zucchini, onion, garlic, sea salt, and lemon juice until smooth.
  2. Add in the avocados and pulse till smooth. Don't overblend or the texture will be more like mousse instead of guacamole.
  3. Add in the cilantro, scallions and tomatoes and pulse until chunky.
  4. Serve with cucumber slices or veggies for dipping! Enjoy
I find this is great without sea salt, or you could add some seaweed for extra salty flavor. However, if I'm making this for guests who are used to salt in their diet I will put the sea salt in.
