Raw Cacao Nut Butter Energy Balls | Vegan & Gluten-Free
Serves: 12
  • 15 large medjool dates, pitted and halved
  • 1 cup gluten-free old fashioned oats
  • 3 tbsps raw cacao powder
  • ½ tsp sea salt
  • 1 tsp vanilla extract
  • 2 tsps maple syrup
  • ¼ cup raw almond butter
  1. Put the dry ingredients then the wet ingredients in the food processor.
  2. Pulse or blend for 30 seconds to 1 minute till combined. The mixture will be crumbly but press together easily between your fingers.
  3. Roll into balls.
If the mixture is too dry and doesn't press together easily, pulse in ½ tsp water. The mixture shouldn't be too wet because you want a cake-like texture, if too wet they will be sticky.

If you can't have almond butter try coconut butter or tahini instead.

These store for 2-3 days on the counter in a sealed container or for about 5 days if kept in the fridge.
